How to Make Mango Chia Parfait With Berries & Granola

Step 1: In a bowl, add chia seeds, milk, yoghurt, honey, vanilla and pinch of salt. Whisk well, wait 5 mins, whisk again to prevent clumps.

Step 2: Cover and refrigerate for at least 2 hours, or overnight until thick and spoonable.

Step 3: Mash mango with a fork. Keep aside 2 tbsp diced mango for toppings.

Step 4: Assemble in jars: chia pudding , layer of pureed mango then more chia pudding. Repeat if you want another layer.

Ingredients
  

  • 40 g chia seeds
  • 200 g unsweetened soya milk or any milk of your choice
  • 100 g plain Greek yoghurt or plant based yoghurt if vegan
  • 20 g honey or maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • 150 g + 2 tbsp fresh ripe mango
  • 75 g mixed berries
  • 30 gm granola

Instructions
 

  • Whisk chia seeds, milk, yoghurt, honey, vanilla and a pinch of salt in a bowl. Let sit 10 minutes, whisk again to avoid clumps.
  • Cover and refrigerate for at least 2 hours or overnight until thickened and gel-like.
  • Mash mango with a fork, keep aside 2 tbsp for toppings and wash berries.
