Why You'll Love This Recipe
- Ready in 10 minutes, no baking - Just soak, blend and chill. One blender, zero oven.
- High-protein and actually filling - Silken tofu + pistachios = ∼7g protein per cup, so it's dessert that keeps you full.
- Ultra-creamy, not grainy - The trick is blending your pistachio paste separately until super smooth first.
- Naturally green with that perfect color - No food coloring, just real pistachios. That light creamy pistachio beige-green you see in my photos.
- Vegan, dairy-free and refined sugar-free - Sweetened with just maple syrup, so it fits your Nourishing Glow vibe.
- Meal-prep friendly - Makes 3 cute cups, sets in 2 hours and keeps for 3 days. Tastes even better the next day with dark chocolate shavings on top.
Key Ingredients

- Silken tofu is the secret to that ultra-creamy, mousse-like texture without dairy because of its silky texture. It's packed with protein and blends completely smooth when you use silken, not firm. Make sure to drain it well before using. Learn more about the different types of tofu here.
- Raw pistachios are the heart of this recipe. They give that natural pistachio color, nutty flavor, and healthy fats. Soak them for 4 hours then blend until super smooth - that's how you avoid a grainy mousse. Pistachios are rich in protein, fiber and antioxidants.
- Pistachio cream / pistachio butter makes it extra rich and intensifies the pistachio flavor. I use store-bought smooth pistachio cream - it also helps with that light green color you see in the photos. Use unsweetened if you can.
- Maple syrup adds natural sweetness without refined sugar. It blends better than honey in tofu mousse and keeps it vegan. Start with 2 tbsp and add more to taste.
- Vanilla extract & cardamom powder bring warmth and balance. Vanilla makes it taste like real dessert, cardamom is optional but it makes pistachio taste more luxurious - just 1/4 tsp is enough.
- Matcha powder (optional) & sea salt - you can add a tiny pinch of matcha so that you get nice color for your mousse and if your pistachios are pale and you want that perfect pistachio green, and salt makes all the flavors pop. But don't add too much matcha or you'll taste it.
Tips For Perfect Color & Texture
- Soak pistachios before blending then blend alone until super smooth - don't blend everything at once or it will be grainy.
- Use silken tofu only - firm tofu won't turn into mousse because of its rough texture. Drain gently, don't press hard.
- For that light creamy green: Use 60% homemade paste + 40% store-bought pistachio cream. Add just a pinch of matcha if it's too pale - no food coloring.
- Blend 90 seconds minimum on high. Scrape and blend again. It should look silky with a swirl, not coarse.
- Chill at least 2 hours - it thickens and the color lightens to perfect pistachio after chilling.
How To Make High Protein Creamy Pistachio Mousse
Step 1: Soak the pistachios. This creates a high protein pistachio mousse base.Add 70g raw pistachios to a bowl.Cover with hot water and soak for 4 hours or overnight.Drain and rinse. This is what makes it silky, not grainy.

Step 2: Make a smooth pistachio paste. Add soaked pistachios to a blender with 2 tbsp water and blend for 60 seconds until completely smooth like hummus. Scrape down the sides and blend again. Set aside.

Step 3: Blend the mousse. To the same blender, add 300g silken tofu (drained), your pistachio paste, 40g pistachio butter, 2 tbsp maple syrup, 1 tsp vanilla extract, 1/4 tsp cardamom, 1/4 tsp matcha powder for natural color and a pinch of salt. Blend on high for 90 seconds until creamy and light green. Taste and add more maple syrup if needed.

Step 4: Pour and chill. Divide the mousse into 3 small cups or jars. Smooth the tops with a spoon. Refrigerate for at least 2 hours. It will thicken from a thick cream to a set mousse as it chills.
Step 5: Garnish and serve. After its set, top with crushed pistachios, dark chocolate shavings or toasted kataifi for the Dubai version. Serve cold.

Storage Tips
- Fridge: Keeps 3 days in sealed cups. Cover with cling film so it doesn't form a skin. Tastes best next day.
- Don't freeze: Tofu mousse turns watery and grainy when frozen.
- Make ahead: Make paste (Step 2) up to 2 days ahead, then blend with tofu day of serving for fastest prep.
